My Favourite Summer Salad: Strawberry & Poppyseed Salad Recipe
As you know by now, I love salads. If I could eat salads for breakfast I would (and honestly… I ran out of yogurt once, and just ate leftover panzenella salad at 7 a.m.. No regrets). We’re getting to end of summer, so I can’t let it pass by by without posting my absolute favourite summer salad.
It’s packed with summer fruit - strawberries, blueberries, pineapple, and oranges, the dressing is super light, and when you top it off with grilled chicken it really is like summer in a bowl. .
Strawberry & Poppyseed Salad
Ingredients
- 1 head of romaine lettuce 
- 1/2 cup fresh blueberries 
- 300 grams canned mandarin oranges 
- 3/4 cup fresh pineapple, cut into small pieces 
- 1 cup strawberries, sliced into small pieces, 
- 1 grilled chicken breast 
Dressing:
- 1/2 cup olive oil 
- 1/4 cup white wine vinegar 
- 1 tbsp orange juice, or juice from canned mandarins 
- 2 tsp poppy seeds 
Method
- Preheat the oven to 365 F, season chicken with salt and pepper., Bake for about 20 minutes. 
- Chop rest of the ingredients and combine in a bowl. 
- Combine olive oil, vinegar, orange juice, and poppyseeds in a bowl and whisk until incorporated. 
- Once chicken is done in the oven, finish on grill on high heat, for about 3 minutes on each side. Slice chicken. 
- Dress salad and plate. Top with sliced grilled chicken.
