Babel: Authentic British Scones
Babel is a thrilling story from start to finish. I got so caught up in the story that I forgot to pay attention to the food! Nonetheless, I did some re-reading and I found the perfect recipe - English scones! It’s such a poignant part of the novel when Robin receives a care package from Mrs. Piper and their bond over the baked good. With all the violence in the book, I thought it was fitting that we focus on happier times for our character, and make authentic British scones.
Authentic British Scone Recipe
Ingredients:
- 2 1/2 cups all-purpose flour 
- 1/4 tsp salt 
- 3 1/2 tsp baking powder 
- 6 tbsp unsalted butter, cold 
- 3/4 cup milk 
- 1 tsp lemon juice 
- 1 tsp vanilla extract 
- 1 egg, beaten 
Method:
- Preheat oven to 400 F. 
- Combine flour, salt, baking powder, and sugar in a large bowl. 
- Cut the cold butter into small cubes, and add to the flour mixture. Using a pastry cutter or two knives, cut the butter into the flour mixture until it resembles fine crumbs. 
- Add the milk, lemon juice, and vanilla extract to the flour and butter mixture. Quickly combine with a fork or wooden spoon. 
- Place the dough onto a lightly floured surface and knead the dough a couple of times. Be sure not to overwork the dough. 
- Using your hands, pat down the dough so that it is about 1 1/2 inches in thickness. 
- Use a 2-3 inch round cookie cutter to cut out the scones. Place the scones on a baking sheet lined with parchment paper. 
- Brush the tops of the scones with the beaten egg, and bake for 10 -15 minutes or until the tops are slightly golden brown. 
- Serve with jam or clotted cream.
