Asparagus & Radish Salad
Spring is in the air so that means I get to get creative with salads again! I wanted something colourful, crisp, and flavourful, my mind went immediately to asparagus and radish. I added some tomatoes and a lemon vinaigrette to add some acidity to the dish. I hope you enjoy it as much as I did.
Asparagus & Radish Salad
Ingredients:
2 bunches of asparagus
2 cup cherry tomatoes, halved
1 bunch of radishes, thinly sliced
Fresh pecorino cheese, grated
Lemon Vinaigrette:
3 tbsp lemon juice
1/4 cup olive oil
2 tbsp apple cider vinegar
Method:
- Preheat oven to 425 F. Trim asparagus and place on baking sheet. 
- Drizzle olive oil and salt and pepper and roast in oven for 15 minutes. 
- While the asparagus roasts, half cherry tomatoes and thinly slice the radishes. 
- In a small bowl whisk lemon juice, olive oil, and apple cider vinegar until emulsified. Add salt and pepper to taste. 
- When the asparagus is done, cut in half and place it in a large bowl with tomatoes and radishes. Coat ingredients in the lemon vinaigrette. 
- Plate and grate pecorino cheese on top.
